VANILLA CUPCAKES WITH CHOCOLATE GANACHE

Absolute birthday treat!

INGREDIENTS:
1. Butter- 70 g
2. Granulated Sugar- 100 g
3. Egg- 1
4. Lemon/Vanilla essence- 1 tsp
5. All Purpose Flour (maida)- 90 g
6. Baking Powder- 1 tsp
7. Salt- ¼ tsp
8. Milk- 60 ml
9. Chocolate chips- for garnish
10. Cherry/ Grapes- for garnish
11. Dark/Milk chocolate- 100g
12. Heavy Cream- 100g

PROCEDURE:
1) In a large bowl, with a beater, cream the butter and sugar together until it becomes smooth and stiff
2) Add the egg & vanilla/lemon extract and beat again
3) In a separate bowl, sift together the dry ingredients- Flour, baking powder and salt
4) Fold the flour mixture to the wet batter half at a time
5) Then fold in half of the milk
6) Repeat until everything is incorporated
7) Line a cupcake tray with liners and spoon/scoop in the batter ¾th so as to leave space for rising
8) Bake it in a pre-heated oven at 180 degree C for 15-18 minutes or on the combination mode in the microwave oven for 4 minutes. (or until a toothpick comes out clean)
9) For the ganache, heat up the cream just until before it starts boiling, and remove it from the heat
10) Add the chocolate (broken or chips) into the hot cream and leave it for 1 minute to melt
11) Then beat it with a hand whisk until it is smooth and silky in texture
12) Frost this over the cooled cupcakes
13) Add the garnish on top
14) Let the ganache set over the cupcakes for a while before serving.

Makes 8 cupcakes
