NATURAL FOOD COLOURS

Hey everyone!
Happy Holi!
The festival of colours is here again!!

Today’s post is about natural food colours. I still stand by the fact that we should not over use artificial colours in our food. At the same time, I understand that we can’t avoid it at certain places where it is required to be used in confectionary.

Nonetheless, here is a list of natural things you can use as your basic colour palate. And then mix and match to create the other colours.
It goes without saying that you would have to use them a lot more than artificial colours to get the pigment.
The powders of these fruits / vegetables will be more pigmented than the juices.
They work beautifully with frostings, cakes even Macarons (some of them)

RED –
Beetroot + Turmeric

GREEN –
Pistachio / Spinach / Matcha Green tea powder

YELLOW –
Turmeric

BLUE –
Pomegranate / Purple Cabbage + Baking soda

PINK –
Beetroot Juice

PURPLE –
Purple Potatoes / Purple Grape / Purple Cabbage

ORANGE –
Carrot / Sweet Potato / Fresh Sindoor Seeds

BROWN –
Cocoa Powder / Milk Chocolate / Coffee

BLACK –
Activated Charcoal (food grade)
