Eggless Coconut Cake

Ingredients –

  1. All Purpose Flour – 190g
  2. Desiccated Coconut – 30g
  3. Baking Soda – 1/2 tsp
  4. Baking Powder – 1 tsp
  5. Caster / Powdered Sugar – 180g
  6. Butter – 180g
    I used Salted, if you use unsalted, add 1/8th tsp salt.
  7. Warm Coconut Milk – 150g
  8. Vanilla Extract – 1 tsp
  9. Coconut Shavings – 25g

Procedure –

  1. Sift together Flour, Baking Soda, Baking Powder, Desiccated Coconut. Mix well.
  2. Beat together Butter, Sugar till light and fluffy.
  3. Mix together Coconut Milk, Vanilla Extract.
  4. Alternately add dry and wet ingredients into the butter and mix gently.
  5. Pour and level the batter in a 6″ prepared cake pan, add coconut Shavings on top.
  6. Bake in a preheated oven at 160°C for 40-45 minutes until a skewer inserted comes out neatly.
  7. Cool it down completely before cutting into it.
